Lamang Tapai: A Special West Sumatran Culinary for Eid!

West Sumatra is not only famous for its rendang and Padang satay, but it also has another delicious specialty food called lamang tapai.

Lamang tapai is one of the traditional foods that has a unique flavor and is often enjoyed in various events like Eid al-Fitr. To learn more about lamang tapai and how to enjoy it, read this article until the end!

What Is Lamang Tapai?

Lamang tapai is one of West Sumatra's specialties, specifically from Tanah Datar. This food is usually sold in local markets and is often served as an Eid snack. In addition, many people also bring it as a souvenir when visiting relatives.

Lamang tapai consists of two parts, lamang and tapai. Lamang is made from white glutinous rice that is cooked with coconut milk, pandan leaves, and a pinch of salt, then wrapped in banana leaves and grilled inside a bamboo.

Meanwhile, tapai is made from black glutinous rice fermented with yeast and cloves for several days. Tapai is then used as a topping on lamang.

How to Enjoy Lamang Tapai

Lamang tapai is similar to tapai uli from Betawi, but the making process is slightly different. Tapai uli is generally steamed and mashed, while lamang is grilled in bamboo, which gives it a distinctive aroma.

This traditional dish can be enjoyed in various ways. Some people eat it with durian, bread, or sugar apple. We can eat it by dipping the lamang into the tapai sauce to make the taste more delicious.

Lamang Tapai Recipe

The making process of Lamang Tapai consists of two stages. The first one is the making process of lamang, and the second one is making the tapai. Here is the full recipe for lamang tapai.

1. How to Make Lamang

Here are the ingredients that are used to make lamang:

  • Rice cake mold to replace bamboo.
  • 1 tsp salt.
  • 2 tbsp oil.
  • 500 grams of white glutinous rice.
  • Banana leaves as needed.

To make lamang, follow these procedures:

  1. Wash the glutinous rice thoroughly, then soak it in water for about 1 hour. After that, drain the water.
  2. Combine glutinous rice with salt, then stir until it is evenly distributed.
  3. Prepare a rice cake mold with banana leaves on the inside. Put the glutinous rice into the mold, but don't overfill it, just ¾ of it so that there is enough room for its expansion when it’s already cooked.
  4. Boil water in a pot with enough height to submerge the mold. Add oil to the mold that contains glutinous rice, then put it in the pot. Simmer for 3-4 hours or until it is fully cooked.

2. How to Make Tapai

The ingredients that are used to make tapai are as follows:

  • 3 cloves to give fragrance.
  • 1 kg black glutinous rice.
  • 1.5 grains of yeast that have been pureed. 

Here are the steps on how to make tapai:

  1. Wash the black glutinous rice thoroughly, then soak it in water for about 1 hour. After that, drain the water.
  2. Steam the glutinous rice for 1 hour or until cooked, then remove from the heat. Wait for a moment until it cools down.
  3. Sprinkle the pureed yeast onto the glutinous rice, then stir until evenly distributed.
  4. Transfer the glutinous rice that has been mixed with yeast into a jar, then close the lid tightly. Let it sit for 3 days so that it can ferment and become tapai.
